Characteristics

Vibrant straw yellow color with gray hues. Lemon flowers and citrus aromas dominate with Moschofilero in the foreground, while Malagousia discreetly supports the blend with hints of rose petals and Assyrtiko contributes with peach flavor and the saltiness of the sea, completing the aromatic palette. Intense in the mouth with refreshing acidity and nice balance.

Vinification Process

The three varieties directly after their harvest, are transferred to a cooling chamber where they stay overnight at a temperature of 7-8°C. Next day, the grapes are gently pressed by pneumatic press, followed by alcoholic fermentation with selected yeasts at 16-18°C. Blending is taking place right after the end of the fermentation and the wine stays on the fine lees for 4-6 weeks before bottling.

Moschofilero 60%, Assyrtiko 25%, Malagousia 15%.

Moschofilero: Zevgolatio, Mantinia Appellation at an altitude of 650 meters. Assyrtiko: Ampelokipi, Mountainous Aegialia at an altitude of 730 meters. Malagousia: Grekas, Mountainous Aegialia at an altitude of 620 meters.

Food Pairing

Ideal accompaniment for seafood, sushi and fried squid.

Serving Temperature

Best served chilled at 8-10°C.
