Characteristics

Light salmon colour. Aromas of cherry, rose petal and white-fleshed fruit overwhelm the nose initially, while in the background subtle citrus notes appear. Vibrant and crisp in the mouth, with the acidity due to the high altitude giving long aftertaste.

Vinification Process

The grapes are handpicked and transported directly to the winery, where they are first chilled and then destemmed. Following, they are transferred to stainless steel tanks, where the cold maceration takes place in 8-10°C for 12-18 hours. By gentle pressing, we separate the juice from the skins and fermentation which lasts for 18-22 days is carried out in 16-17°C.

Agiorgitiko 40%, Moschofilero 35%, Roditis 25%.

Agiorgitiko: Kastraki, Nemea Appellation at 660 m. altitude.
Moschofilero: Zevgolatio & Milia within Mantinia Appellation, at 640 m. altitude.
Roditis: Mamousia, Mountainous Aegialia at 510 m. altitude.

Food Pairing

While it is an ideal combination with salmon carpaccio, fried mullet or seafood pasta, it can also be enjoyed on its own.

Best served chilled at 8-11°C.
