Selected vineyards, 15-40 years old. The harvest is manual and the grapes are transported in refrigerated chambers, while following they are strictly sorted before being sent to the press. The juice stays with the skins of the reddish variety at 7-9°C for 5-6 hours and then, light pressure is applied and fermentation process takes place at 14-16°C.
