Characteristics
Bright pink colour with light blue hues. Aromas of strawberry, pomegranate and red fruits overwhelm the nose initially, while in the background subtle herbal notes appear. Rich and crisp in the mouth, with the acidity due to the high altitude giving long aftertaste and vibrancy.
Vinification Process
The grapes are handpicked and transported directly to the winery, where they are first chilled and then destemmed. Following, they are transferred to stainless steel tanks, where the cold maceration takes place in 8-10°C for 12-18 hours. By gentle pressing, we separate the juice from the skins and fermentation which lasts for 18-22 days is carried out in 16-17°C.

Syrah: Pyrgaki, Mountainous Aegialia at 820 m. altitude.
