Characteristics

Gray hues with golden highlights, indicative of the contact with the acacia barrel. Typical aromas of roses with notes of bergamot marry beautifully, with the touch of concrete and acacia giving purity, complexity and a creamy mouthfeel.

Vinification process

1.14 hectare non-irrigated vineyard with a yield of 6000-8000kg/hectare, was planted in 1972 and is cultivated with organic practices. After 8-10 hours of cold maceration at 7-8°C, only the free-running juice is collected and alcoholic fermentation begins spontaneously with indigenous yeasts in stainless steel tank. Then and while the fermentation is about halfway through, a part of the juice is separated and transferred to finish the process in small concrete eggs and another part in acacia barrels. For as long as it takes for the wine to mature, we make sure it is in constant contact with its fine lees, which will enrich the viscosity and texture, while at the same time supporting it for its long journey through time.
